It has only been six months since lunch goers in Hunt Dining Hall at Mary Baldwin University were treated to the savory and locally sourced amuse-bouche from Zynodoa Executive Chef James Harris during the college’s observation of Sustainability Day. This Friday, the dining hall will again welcome a top-flight local chef as Melissa Close Hart from Palladio Restaurant in Barboursville helps Mary Baldwin mark World Food Day. “It’s a special treat for Mary Baldwin,” said Michael Clay, executive chef at Mary Baldwin. World Food Day, observed annually in October, is sponsored annually by the United Nations to bring awareness to issues of food security. On the menu in Hunt is white balsamic braised chicken with fennel, carrots and sweet onions; Parmesan polenta with rosemary; sautéed escarole with red pepper flakes; and orange olive oil cake with orange caramel.
